Many Small Changes Can Help

I just read an article in Organic Gardening Magazine that discussed a recent study comparing greenhouse-gas emissions. What it comes down to is that more energy is used to transport grain to cattle on feedlots than is used to ship food to grocery stores even across state lines.

“The authors concluded that eating just 13 to 15 percent less red meat and dairy products would reduce an individual’s output of greenhouse gasses as much as eating a diet comprised entirely of locally produced foods.”

To me, this is an amazing find. The question is how to convince a country of carnivores that they can help the earth by substituting a few of those meat-centered meals with something like bean and soy cheese burritos or whole wheat spaghetti with marina sauce? Most won’t give up their dependence on cows as a food source just like they won’t give up those SUV’s. People just don’t get that if everyone made a small change, we would see huge results.
